Ingredients

1 cup chopped spinach (palak)
1/2 cup grated carrot
2 cups cooked rice (chawal)
1 tbsp butter
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped onions
1/2 tsp chilli powder
salt to taste

Method

Heat the butter in a broad non-stick pan and add the cumin seeds.
When the seeds crackle, add the onions and sauté on a medium flame for 1 minute.
Add the carrots and spinach and sauté on a medium flame for 2 minutes.
Add the rice, chilli powder and salt, mix well and cook on a medium flame for 1 minute.
Cool slightly and pack in a tiffin box.
