Talking about griddles, commonly known as tava, it is a wide surfaced pan with very shallow (and sometimes no) sides, which is heated for griddling or grilling. They come both curved and flat bottoms. They are generally made out of iron or are covered with a non-stick coating. The coating prevents food from sticking and makes cleaning easier. It is really an advantage when reheating sticky foods, such as rice. It also reduces the amount of fat that is normally required while cooking.
